Karthigai Special- Pori Urundai | Gayathiri's Cookbook

Pori Urundai is a traditional sweet prepared for the Karthigai Deepam festival.

Arisi pori(Puffed rice) and Nel pori(puffed rice with husks) are used to make this sweet within 30 minutes. This can be made as an evening snack and will preserve quality for a week in an airtight container.

Ingredients:

Ghee- As needed
Coconut pieces- 3/4 cup
Jaggery-2 cups
Water-1/2 cup
Cardamom powder- 1 teaspoon
Dry ginger powder- 1 teaspoon
Arisi pori(puffed rice)- 3 cups
Nel pori(puffed rice with husks)-3 cups


Directions:
1. Fry coconut pieces in ghee for 2 minutes over medium flame.
2. Add 1/2 of the coconut pieces to 3 cups of Arisi Pori and the other half to the 3 cups of Nel Pori.
3. Take jaggery and water in pan. Heat over medium flame until jaggery dissolves.
4. Cook jaggery syrup until hard ball consistency (take a little bit of the syrup in a spoon and drop it in a bowl of water). Try gathering the mixture to form a ball. It should form a nice firm ball. You should be able to hear a sound when tossing it on a hard plate.
5. Switch off the heat immediately.
6. Add cardamom powder and dry ginger powder to the jaggery syrup.
7. Pour half of the jaggery to the Rice Pori and the other half to the Nel Pori. Mix it well.
8. Apply ghee to your hands to make round balls.


Pori Urundai is ready!!!
