Japanese Chirashi Sushi Scattered Sushi The Easiest Sushi you can make at home!

Today I'm going to be making Chirashi Sushi.

Chirashi Sushi literally means scattered sushi.

You can scatter the ingredients over the sushi rice.

The toppings depend on your budget and the ingredients you can afford, or you can access.

Today I chose shrimp, Unagi Eel, Smoked salmon, and Ikura.
Nanohana for the color and crunch.

You can go for the vegan version using mushrooms, broccoli, and root vegetables like carrots and lotus roots.

So basically you can put ANYTHING you want!

Simmered Shiitake
5 dried Shiitake mushrooms
1 cup water to rehydrate
1/2 tbs sugar
1/2 tbs soy sauce
1/2 tbs mirin

Shrimp
200g (8 oz) shrimp
a pinch of salt
1 tbs Sake

Unagi (Japanese eel)
1 Unagi
1 tbs Unagi sauce or
Teriyaki sauce
1 tbs Sake

Shredded Omelet
2 large eggs
1 pinch of salt and sugar
1/2 ts potato starch
or corn starch
1 tbs water

Sushi rice
1 rice cup (180ml)
short gtrain rice
1 rice cup (180ml) water
3~4 tbs Sushi Vinegar

Smoked salmon
Ikura
Nanohana
(rape blossom)
