Instant Pot Jambalaya

Cook up some great Cajun Jambalaya quickly in your Instant Pot. Here's my recipe:
Chop up a big red onion, a sweet bell pepper, three or four cloves of garlic, a hot scotch bonnet pepper (using cooking cloves 'cause it's so spicy!) two stalks of celery and a few leaves of Swiss chard (or spinach or kale or no greens if you prefer). Set aside. Set Instant Pot to saute. Heat up two tablespoons oil or ghee in your Instant Pot. Add two or three hot sliced Italian sausages, (I used hot turkey sausage) and three diced boneless chicken breasts. Brown the meat for about five minutes. Remove to a plate. With Instant Pot still set to saute, add all your chopped vegetables. Add a teaspoon or two of Cajun seasoning (more if you didn't add a Scotch bonnet peppper). Saute for about three minutes. Put the meat back in the pot. Add one cup long-grain white rice and 2-1/2 cups of chicken broth. Set Instant Pot to PRESSURE COOK on HIGH (or MANUAL) for eight minutes. When cooking is done, allow a 10-minute natural release. Release remaining steam, remove lid and set pot to SAUTE. Add two cups cleaned shrimp, and stir well. Cook until shrimp goes from gray to pink, about four or minutes. Serve with chopped green onions or chives, and hot sauce if you need it. ENJOY.
