Comfort food - Instant Pot Mac & Cheese - in a time of stress

This is easy comfort food that I like to make when I'm feeling stressed. And who's not feeling stressed these days? I made this video not only to share an easy recipe, but to share a few thoughts on these difficult days we're all facing. I recommend we all hunker down, try to stay calm, and cook foods we love for our families.

To make SUPER EASY macaroni and cheese in the Instant Pot, put 4 cups water, 3 tablespoons butter, 1 pound of elbow macaroni and 2 teaspoons salt into your Instant Pot liner pan. Stir. Secure lid on pot with sealing ring in place. Set Instant Pot to PRESSURE COOK (High) or MANUAL for 4 minutes, with valve seat to SEALING. It will take a few minutes for pressure cooking to begin. When pressure cooking is done, use a quick release, draping a kitchen towel over the valve during release to keep butter and water from sputtering out with the steam. Once steam is released, valve will go down and you can open the pot and remove the lid. Stir macaroni well. Add 2-4 cups grated cheddar cheese. Stir well, adding enough half-and-half (or milk) to make get to a creamy consistency that you like.

You can put this into a buttered baking dish and top with bread crumbs and bake at 350 degrees for 30 minutes, if you like, or you can just enjoy as it is.
