Instant Pot Cornish Game Hens with Lemon & Rosemary

It's easy to cook Cornish Game Hens in the Instant Pot quickly, and they're delicious. It takes 20 minutes of pressure cooking for fresh hens, and 55 minutes for frozen. I used fresh for this recipe: Pat each game hen dry and remove and discard the giblets and neck inside the cavity. (NOTE: Work better than I did in this video to keep things clean when working with raw poultry. Wash hands often, dont use the same towels to wipe your hands and clean your counters, etc. and have your liquids poured into measuring cups before you even start.) Cut one large onion into big chunks and stuff those inside your hens. In a small bowl, combine olive oil, lemon and two cloves chopped garlic. Brush generously on the skins of the hens. Rub additional fresh rosemary on the skins. Place hens on your trivet inside your Instant Pot liner. Add 1/2 cup water and 1/2 cup dry white wine. Seal your pot with your lid (making sure sealing ring inside the lid is in place). Set Instant Pot valve to SEALING and set to pressure cook on HIGH (or MANUAL) for 20 minutes. While hens are cooking, cut up two sweet potatoes, brush with olive oil and Creole seasoning and place on a foil-covered cookie sheet. Roast for 20 minutes at 400 degrees F. Remove from oven when hens finish cooking. When hens are done cooking, use an Instant release. They're ready to eat now, but if you like, put under the broiler for about 5 minutes until the skin on top is golden brown. ENJOY.
