Inji morappa/ இஞ்சி மொரப்பா | Gayathiri's Cookbook

Inji morappa - a digestive drop, is made of ginger and sugar, and helps with indigestion, acidity, sore throat and rudimentary food poisoning.


Ingredients:

Ginger(இஞ்சி )- 200 grams
Sugar(சர்க்கரை )- 1.5 cups
Cardamom powder(ஏலக்காய்த்தூள் )-1/4 tsp
All purpose flour(Maida)(மைதா ) - 2 tbsp

Recipe:
1. Take 200 grams ginger and peel the skin.
2.Grind it with 1/2 cup water into a fine paste.Strain the juice.Grind the ginger with 1/4 cup water and strain the water again.
3.Keep the juice aside for 20 minutes.After 20 minutes, pour the juice into another bowl without mixing.You can see a white sediment at the bottom. Discard that.
4.In a pan, add sugar, ginger juice and cardamom powder.Mix it well and bring it to boil.
5. Keep the flame on medium and cook until it comes to two string consistency.At this stage, add 2 tbsp flour and mix it vigorously.
6. Cook for a minute and then pour it on a greased plate.Let it set for a while.Cut into pieces when it is still warm.
