Imo Kenpi (Sweet & Crispy Sweet Potato Treat) | Graces Japanese Cooking

Imo Kenpi is a simple sweet crunchy snack made from two ingredients sweet potato and sugar! It’s enjoyed throughout Japan and readily found in grocery stores. For most, it’s a nostalgic snack; taking then back to the good old days snacking on imo kenpi walking home from school:) Imo Kenpi was first found in the Kochi prefecture as a way to save the over abundance of sweet potatoes available in the area.

Warning! Once you start eating these crunchy little treats, you won’t be able to stop! Just a warning;) Kids friendly too:) Enjoy!!!!!

Recipe:

1 organic yam or Japanese sweet potato
2 tablespoon organic coconut sugar
2 tablespoon water
Cooking oil for frying

1. Cut sweet potato in half. Cutlengthwise into 2mm slices.
2. Then cut lengthwise into 2-3 mm matchsticks.
3. Soak in water for 10 minutes(Soaking in water will help to remove the excess starch, which can prevent the potatoes from becoming crispy when fried). Drain.
4. Spread the potatoes on a baking sheet lined with paper towels and completely dry. About 45 minutes to an hour.
5. Add cooking oil into a pan (cast iron works well) about 2 inch deep. Heat oil to 350F.
6. Fry for 10 minutes or until crispy. Try not to burn them:) Take potatoes out and drain on a paper towel in a mixing bowl. Repeat until all potatoes are fried.
7. In a small pan, mix together sugar and water on low heat to make the sweet syrup. Stir constantly until a thick consistency is reached. About 2-3 minutes.
8. Add syrup to the bowl of potatoes. Mix well.
9. Lay the potatoes on a baking sheet to dry.
