In this easy recipe, the home cook throws in one pot any vegetables available at home, and cooks them in a rich tomato sauce. The Greek word Mageirio, comes after the verb mageirevo, which means to cook.This is a staple in my home, especially in the Summer months, if I want something different than my usual, beloved Green Beans Yiahni. It's one of those dishes that you should definitely include in your weekly diet. Healthy, nutritious and just perfect for the whole family! After all, Ikarians know how to nourish themselves in a healthy and inexpensive way; no wonder they have a longevity record.Suitable for vegans, fasting, gluten-free, lactose-free.INGREDIENTS: 500 gr / 1 lb 2 oz Flat Green Beans (Romano beans-fresh or frozen) 500 gr / 1 lb 2 oz Potatoes 400 gr / 14 oz / 4-5 Fresh, medium, ripe Tomatoes, mashed or grated 100 ml / 0.4 cup Olive Oil 1 large Onion, finely chopped 2-3 Garlic Cloves, minced 140 gr / 4.9 oz Corn, canned 1 tsp. dry Oregano bunch fresh Celery, finely chopped bunch fresh Parsley, finely chopped 500 ml / 2 cups hot Water Ground Salt and Pepper Optional: 1-2 spicy, pickled, whole Green Peppers or 1 fresh Green Pepper (capsicum), cubed Interesting Note: As I mentioned in the introduction, this is an all-purpose vegetable stew. That means you could practically add any other veggies you have available at home e.g. zucchini, carrots, peas even wild greens like amaranth or dandelions. Do adjust the tomato sauce according to the amount of vegetables used.
