Making buckwheat soba noodles at home is surprisingly simple...well, maybe not as simple as buying a packet of dried noodles but they're fun (and even therapeutic) to make and taste a whole lot better!Ingredients (Serves 2)For Noodles:2 cups stone milled buckwheat (280g)½ cup all purpose flour (70 grams)¾ cup water½ cup tapioca starchFor dashi (dressing):1 tbsp minced ginger1 tsp minced garlic5 tbsp soy sauce2 scallions, choppedMix flours and water, roll out into discs and cut using the tapioca starch in between the noodle sheetsMake the dressing by mixing the soy sauce, ginger and garlicBring water to a boil, and cook noodles for about 3 minutesCombine noodles and dressing, garnish with scallions___Follow us!
