How to Make Soba Noodles from Scratch | Erwan Heussaff | Tastemade

Making buckwheat soba noodles at home is surprisingly simple...well, maybe not as simple as buying a packet of dried noodles but they're fun (and even therapeutic) to make and taste a whole lot better!

Ingredients (Serves 2)

For Noodles:

2 cups stone milled buckwheat (280g)
½ cup all purpose flour (70 grams)
¾ cup water
½ cup tapioca starch

For dashi (dressing):

1 tbsp minced ginger
1 tsp minced garlic
5 tbsp soy sauce
2 scallions, chopped

Mix flours and water, roll out into discs and cut using the tapioca starch in between the noodle sheets

Make the dressing by mixing the soy sauce, ginger and garlic

Bring water to a boil, and cook noodles for about 3 minutes

Combine noodles and dressing, garnish with scallions
