Serves 6-7 persons
Roasted Turkey Roulade and Potatoes is a distinctive dish, prepared for the festive Season or a special occasion.
It needs a bit of preparation time, but the end result will definitely be worth your work in the kitchen!
For your convenience, my recipe is divided into 4 sections, showing separately the preparation for each component of this dish: The stuffing, the rolled turkey, the potatoes and the gravy! Actually, you get 4 recipes in one!
You will be very happy to hear your guests excitement because this is a wonderful, elegant, Festive meal!
So, without further ado, lets learn how to make this impressive roulade!

Ingredients for the stuffing:
200 gr / 7 oz Chicken or Turkey Livers, finely chopped
1 large sweet Onion, finely chopped
1 cup / 130 gr / 4,6 oz Chestnuts, boiled, chopped
60 gr / 2.1 oz Dried Prunes (about 8 pcs), finely chopped
cup / 30 gr / 1 oz Pine Nuts (not roasted)
2-3 Bay leaves
1/3 glass / 80 ml White Wine
3 tbsp. / 45 ml Olive Oil
The Spices:
tsp. Ground Cinnamon
tsp. Ground Nutmeg
tsp. All-Spice
Ground Salt and Pepper

Ingredients for the Turkey Roulade:
1.1 kg / 2 lb 7 oz Turkey Breast (boneless)
300 gr / 10.5 oz / about 10 large Bacon slices
30 ml / 2 tbsp. Olive Oil
Ground Salt and Pepper
A piece of kitchen string

Ingredients for the Cracked Potatoes:
1.5 kg / 3 lb 5 oz Potatoes, suitable for roasting
cup / 60 ml / 4 tbsp. Water
cup / 60 ml / 4 tbsp. Olive Oil
1 tbsp. dry Oregano
Ground Salt and Pepper

Ingredients for the Gravy:
0.8 cup / 200 ml Single Cream light
cup / 120 ml white Wine
Stock Cube Chicken
1 tsp. Corn Flour
2 tbsp. / 30 ml Balsamic Vinegar
1-2 tbsp. Butter
