How to Make Beet Brownies (W/ Kim Persona!) // The Spicy Kitchen

INGREDIENTS:
2 large cooked beets, peeled
1/4 c vegetable oil
1/4 c cocoa powder
1 cups white whole wheat flour
1 teaspoon baking powder
teaspoon salt
4 eggs at room temperature
1 cup sugar

Break beets into chunks and blend with half of the sugar in a food processor until beets have been reduced to small chunks. Add in the rest of the ingredients and puree until you have a uniform batter consistency. Pour into a baking tray lined with parchment paper and back at 350F for 30 minutes, or until bounceback. Enjoy!
