How to cook daikon radish daikon nimono (using dashi stock) EASY!

Want an easy Japanese side dish? This daikon nimono may do just that! Daikon nimono translated literally means daikon simmered thing. It's an easy way to eat more daikon radish and to enjoy the deep and delicate flavor of homemade dashi stock.

Daikon radish works well for this nimono because it absorbs all the goodness of the dashi stock it's cooking in. To help the dashi broth get absorbed by the daikon we score each slice.

In addition, to remove as much of the bitter flavors inherent in daikon we quickly cook the daikon in togijiru for a few minutes.

The togijiru also helps to preserve the nice white color of the daikon. All you gotta do after that is add dashi stock!!
