Hoppin' John in Your New Instant Pot

In this video, I show you how to use your new Instant Pot to make two versions of Hoppin' John, a traditional New Year's dish, one using dry blackeyed peas and one using canned. Hoppin' John is a southern tradition, incorporating collard greens and blackeyed peas (symbolizing currency and coins for prosperity in the New Year!) with rice and ham. It's yummy, and a great way to use up leftover holiday ham.

To make with dried blackeyed peas: Dice one large onion, half a bell pepper, two celery stalks and 3 cloves garlic. Set Instant Pot to SAUTE, and saute these vegetables in a tablespoon of garlic for about 5 minutes, until onions start to become translucent. Add one cup brown rice (not white!) one 14-ounce can of diced tomatoes, 4 cups of chicken or vegetable broth, three cups of chopped collard greens, a cup or so of diced ham or a hambone, and one pound of rinsed and drained dried blackeyed peas. (No need to soak the beans!) Add a teaspoon of cayenne pepper or a generous dash of hot sauce if you like. Stir well and put your lid on your Instant Pot. Set knob to SEALING, and set Instant Pot to PRESSURE COOK on high (or manual) for 20 minutes. At end of cooking, use a natural release for 10 minutes. Release remaining steam, stir and enjoy!

To make Hoppin' John with canned blackeyed peas, cook everything as listed above except use 1 cup of white rice instead of brown rice, use just three cups of broth, and DO NOT add the peas to the pot when you pressure cook the vegetables. Set pot to pressure cook on high (or manual) for just five minutes, and when cooking is done, use a 10-minute natural release. Release remaining steam, open pot, stir in two cans of drained, rinsed blackeyed peas, and allow to SIMMER for about two minutes, until peas are warmed through.
