Ingredients:

For the batter:

1. All Purpose Flour (Maida) - 3 tbsp
2. Corn Flour (Corn Starch) - 2 & 1/2 tbsp
3. Soy Sauce - 1 tbsp
4. Vinegar - 1 tbsp
5. Salt - 1/2 tsp or as per taste
6. Black Pepper Powder - 1 tsp
7. water - 4-5 tbsp

For the Mushroom Gravy:

1. Mushrooms - 6-7 (if mushrooms are big you can cut these into 4 pieces) If mushrooms are small take 15 to 20 of these and keep intact.
2. Ginger (Finely Chopped) - 2 tbsp
3. Garlic (Finely Chopped) - 2 tbsp
4. Green Chili - 1-2 (finely chopped)
5. Onion - 1/2 finely chopped
6. Spring/Green Onion leaves for garnishing
7. Chili Sauce - 1 tbsp
8. Soy Sauce - 1 tbsp
9. Salt - to taste
10. Sugar - one pinch
11. Water - 1/2 cup
12. Corn Flour Slurry - 2 tbsp
13. Oil - enough to deep fry the mushrooms
14. Oil - 2-3 tbs (for the gravy)

Method:

1. For making batter, put all ingredients listed under "batter" in a bowl and make a thick consistent batter ad keep aside.
2. Remove stem from mushrooms and cut these into 4 pieces. If the mushrooms are of small size keep them intact
3. Heat enough oil on high heat in a pan and then deep fry the mushrooms by dipping these one by one in the batter
4. Fry until the coating becomes crispy and mushrooms turn golden brown
5. take out and keep aside.
6. Now take oil (2-3 tbsp) and add ginger, garlic and saute for 23- mins on med heat until these become brown.
7. Now add chopped chili and onions and saute for a min
8. Add chili sauce, soy sauce , salt and sugar and saute for a min
9. Now add water and corn flour slurry and saute for 2 mins. Make sure gravy becomes thick and no lumps are formed
10. Add some finely chopped green/spring onions and turn off the heat

Spicy Mushrooms are ready, garnish with rest of the green/spring onions and serve with rice, fried rice or noodles.
