Serves 5-6 persons
This is another version to my Moms beloved recipe for the classic, Greek succulent Beef stew aka kokkinisto by adding Zucchini and Eggplants in the rich tomato sauce.
The dish is made with basic ingredients that you usually have at home and the 2 beloved vegetables for a hearty, umami, whole meal.
And to make it less time-consuming and energy-efficient, I cook beef first in a pressure cooker.

INGREDIENTS:
1 kg / 2.25 lb boneless Beef like Rib eye or Beef cuts (or any part with a bit of fat)
600 gr / 1 lb 5.5 oz Zucchini, cut in large pieces
600 gr / 1 lb 5.5 oz Bell Eggplant, cut in large pieces
330 ml / 350 gr/ 12 oz Tomato Sauce thick, canned (passata)
2-3 Garlic Cloves, chopped
100 ml / 0.4 cup Olive Oil
1 tsp. Ground Cinnamon
1 tsp. Paprika powder
1 tsp. Sugar
About 1 lt. / 4 cups Water
Ground Salt and Pepper
