For many years I have been making Greek pies, Tiropita, Spanakopita, I cant even recall how many I have prepared, to feed my family. I have also shown my kids how to prepare them. My oldest daughter took it upon her and experimented on how to make the perfect village pastry! I can assure you that she succeeded!She showed it to me and I sat like a pupil to be taught how to make this beautiful pastry. She shared her recipe with me so I can share it with you today.So let me show you how to make this unbelievable golden pastry and prepare Spanakotiropita. You can use the pastry for other pies you make.Suitable for lacto-ovo Vegetarians. Ingredients for the homemade village pastry: 2 cups / 250 gr / 9 oz Yellow Flour (Remilled Durum wheat Semolina) 1/5 cup / 50 ml Olive Oil (for the dough) 2 tsp. / 10 ml white wine Vinegar 1 tsp. Salt 5 gr / 0.2 oz / about 2 tsp. Powder Sugar 120 ml / almost cup Water 0.3 cup / 50 gr / 1.75 oz fine Semolina 2.7 tbsp. / 40 ml Olive Oil (for between pastry layers) Optional: 50 gr / 1.75 oz Butter, in 8-9 cubesIngredients for the filling: 500 gr / 1 lb 2 oz fresh Spinach 150 gr / 5.5 oz Feta Cheese 100 gr / 3.5 oz Greek Anthotyro or Cottage Cheese 70 gr / 2.5 oz Kefalotyri cheese grated (altern: Pecorino) 2 tbsp. / 30 ml Olive Oil 1 Onion, finely chopped 3 Spring Onions, finely chopped in food processor together with bunch Fresh Dill, finely chopped bunch fresh Mint, finely chopped 1 large Egg Ground Salt and Pepper Optional: 1 tsp.
