Serves 3-4 person
Some time ago I posted my Moms beloved recipe for the classic, Greek succulent Beef stew in a rich tomato sauce.
When I want to make meat with greens, I use this follow-up recipe, using basic ingredients that you usually have at home plus flat green beans. A one-pot stew, that is prepared quite quickly, you only need to be patient with its long cooking time.
However, patience is a virtue, its reward is a fork tender, umami beef stew.

INGREDIENTS:
600 gr / 1 lb 5.5 oz boneless Beef chunks
(Rib, short loin or any part with a bit of fat in it)
500 gr / 1 lb 2 oz Flat Green Beans (Romano beans-fresh or frozen), cleaned, halved
250 gr / 9 oz Fresh Tomatoes, mashed or grated (or canned)
15 ml / 1 tbsp. Tomato Paste (puree)
60 ml / 4 tbsp. Olive Oil
1 medium Onion, finely chopped
3 Spring Onions, finely chopped
cup / 125 ml White Wine
1 tsp. Sugar
5 ml / 1 tsp. Vinegar
1 tsp. Paprika powder
Ground Salt and Pepper
bunch fresh Parsley, finely chopped
About 250 ml / 1 cup hot Water
