Gomoku Gohan (Takikomi Gohan) • 五目炊き込みご飯 | Graces Japanese Cooking

Today we have Gomoku Gohan. Gomoku means five ingredients. Gohan means rice. Gomoku gohan is traditionally made with the same five ingredients I used today. Burdock root, carrots, konnyaku, aburaage(fried tofu pouch), and shiitake mushroom (fresh or dried).

Gomoku gohan is also known as “takikomi gohan”, which means to steam a variety of ingredients with rice. It’s considered a comfort food, something special, and the ingredients change with the season. In the fall, we have matsutake gohan or chestnut gohan. In the winter root vegetables are used to warm and comfort the body. Burdock root, carrots, konnyaku, and shiitake are full of fiber, vitamins, and antioxidants that support our immune system and improve overall gut health:)

Recipe (serves 4)

2 cups white rice
2 oz burdock root
2 oz carrot
4 oz konnyaku
2 piece small or 1 large aburaage (fried tofu pouch)
1 shiitake mushroom

1 3/4 cup dashi
3 tablespoons soy sauce
2 tablespoons mirin

1. Wash and soak rice for 1 hour. Drain well.
2. Soak fried tofu in boiling water to remove excess oil. Drain and squeeze out excess water.
3. Shave or thinly slice burdock root.
4. Cut carrot, konnyaku, aburaage, shiitake into thin juliennes.
5. Add rice to the rice cooker. Add dashi, soy sauce, and mirin. Mix well.
6. Add burdock root, carrot, konnyaku, shiitake, aburaage to the rice. In that order, as the root vegetables cook faster closer to the heat.
7. If using a rice cooker with multiple settings, cook on the white rice setting.
8. Gently combine and enjoy!
