Watching & learning to prepare local rice beer in Kohima, Nagaland was such a delight. It is made using local sticky rice by pounding it first using wooden hammers. Rice with husk acts as a starter for fermentation. It takes about 2 weeks of fermentation to make a batch of fresh rice beer.
