Egg Filled Flatbread (鸡蛋灌饼) | The Chinese Cuisine

The perfect breakfast

INGREDIENTS (8 servings):
- 1 tsp active dry yeast
- 1 tsp sugar
- 1 cup warm milk
- 1 tbsp olive oil
- 2 cups all purpose flour
- 3 eggs
- 1 stalk green onion, chopped
- 1 tsp salt
- bacon pieces (optional)

DIRECTIONS:
1. combine yeast, sugar, milk, olive oil, and 1 cup flour
2. mix well, and add in second cup of flour
3. mix until it forms a dough
4. cover for 1 hour to let the dough rise
5. divide the dough into 8 sections and knead each piece thoroughly. flatten each piece into a disk about 6 inches in diameter
6. to make the filling whisk together the eggs, green onions, and salt (bacon is also good)
7. cook the bread in a large pan over medium-low heat
8. wait until the bubbles start forming
9. when the whole piece is blown up like a balloon, cut a hole and pour in some of the whisked egg
10. move the egg around until it forms an even layer
11. cook on each side
12. serve and enjoy!
