Easy Instant Pot Chicken Breasts

Cook chicken breasts in the Instant Pot to enjoy in sandwiches or for supper, right now or later on. For this recipe, I made an easy aioli sauce to brush on the chicken before sauting, then I pressure cooked the chicken. This adds flavor and somehow keeps the chicken extra moist. To make the sauce, stir together a cup of mayonnaise, juice of one lemon, two crushed garlic cloves and some fresh dill. Set half aside in a separate bowl to use later. Brush the remaining sauce on all sides of the chicken breasts. Heat a tablespoon of olive oil in your Instant Pot using the SAUTE function. Add the chicken breasts and brown them for about three minutes on each side. Remove the chicken and turn off the Instant Pot. Add a trivet to the pot and 1 cup of chicken broth or water. Put the chicken back in the pot onto the trivet, put the lid on with the sealing ring in place, and set valve to SEALING. Set pot to pressure cook on high (or manual) for 10 minutes. When cooking is complete, use a quick release. Use a meat thermometer to make sure chicken is thoroughly cooked (at least 165 degrees F). Drizzle with some of your reserved aoili sauce (from your clean bowl). Enjoy! This is awesome with my Instant Pot risotto, so be sure to check out that video too!
