Drunken Chicken (贵妃鸡) | The Chinese Cuisine

There's actually a really interesting story behind the name of this dish. In Chinese, it's called "Gui fei ji." Yang Guifei is one of the four ancient beauties of China and was the highest ranked imperial consort of her time.
One day, she was drunk and she cried out that she wanted "to fly to heaven." The emperor thought that she wanted to eat "fly to heaven" so he ordered the imperial kitchen to make it but obviously they had no idea what this dish was.
First the cooks cooked eagle meat because eagles could fly high, but it turns out that eagle meat is unpalatable. So one chef decided to cook chicken wings and the dish turned out to be delicious. Yang Guifei thought it tasted tender and fragrant. So it was named in her honor.

INGREDIENTS:
- 5 chicken drumsticks
- 20ml cooking wine
- 100ml white wine
- 30ml soy sauce
- 25ml olive oil
- water
- 5g ginger
- 20g green onions
- 10g sugar

DIRECTIONS:
1. chop the chicken drumsticks into sections
2. pour the oil in a pan on medium-high heat
3. add in the ginger and green onions and saute them in the oil
4. add in the chopped chicken
5. saute the chicken until it is brown on the outside
6. add in cooking wine, soy sauce, sugar, and water
7. simmer on low heat for 1 hour, moving the chicken around several times so it doesn't stick to the bottom of the pan
8. after 1 hour add in white wine and turn up the heat
9. once all the liquid has evaporated, it's done!
10. serve and enjoy!
