FERMENTED DHOKLA FROM SCRATCH
This is extremely healthy recipe and can be enjoyed for breakfast, lunch, or dinner. This is rich in protein. It is made from scratch by fermenting lentil and rice, making it easier to digest compare to non-fermented dhokla.
1 cup rice
1 cup spilt chickpea
1 cup yogurt
Salt to taste
1/2 tsp Turmeric
2 green chilies or as per taste
2 garlic cloves
½ inch ginger

FOR TEMPERING
2 tsp oil
1 tsp Mustard seeds
½ tsp Cumin Seeds
Few Curry leaves
2-3 slit green chilies
Pinch of asafetida


METHOD
1. Take rice and dal and soak for 5-6 hrs.
2. Once soaked, add yogurt and grind into thick paste
3. Keep the paste at warm place overnight to ferment. You can also put in instant pot overnight at yogurt mode.
4. The batter would be double in quantity next day if properly fermented.
5. Make ginger, garlic and chili paste.
6. Add to fermented lentil and rice batter.
7. Add salt and turmeric.
8. Put steamer on gas and let the steam form.
9. Grease the Dhokla mold and fill it 3/4th with the batter.
10. Steam it for 20-25 mins.
11. Check the dhokla if it is cooked by inserting toothpick or knife It should come out clean.
12. Take the dhokla out of steamer and keep it for 10 mins to cool.
13. Cut the pieces.
14. For tempering, heat the oil in pan.
15. Add mustard, cumin, curry leaves, green chilies, asafetida. Cook for 20 secs.
16. Add the tempering to dhokla.
