CRUNCHY VEG BITESIngredients¼ cup boiled green peas½ medium red capsicum, finely chopped½ medium yellow capsicum, finely chopped½ medium green capsicum, finely chopped5-6 French beans, finely chopped¼ cup corn kernels, boiledOil for deep-frying¼ cup grated cottage cheese (paneer)2 medium raw bananas, boiled, peeled and grated2 teaspoons green chilli paste1 teaspoon dried oreganoCrushed black peppercorns to taste1 teaspoon red chilli flakes½ teaspoon garam masala powderSalt to taste4 tablespoons refined flour (maida)½ cup fresh breadcrumbsGreen chutney for spreadingMethod1. Heat sufficient oil in a kadai.2. Mix together green peas, red capsicum, yellow capsicum, green capsicum, French beans, corn kernels, cottage cheese, raw bananas, green chilli paste, dried oregano, crushed peppercorns, chilli flakes, garam masala powder and salt in a bowl.3. Add 2½ tablespoons flour and mix well using hands. 4. Divide the mixture into equal portions and shape into oval shapes.5. Mix remaining flour in some water to make a smooth slurry. Take breadcrumbs on a plate.6. Dip each portion in slurry and coat with breadcrumbs.7. Deep-fry the portions in hot oil till golden brown and crisp. Drain on absorbent paper.8.
