Boiled mashed raw bananas, paneer and a mix of colourful vegetables shaped into balls, crumb coated and deep fried to golden brown perfection.

CRUNCHY VEG BITES

Ingredients

¼ cup boiled green peas
½ medium red capsicum, finely chopped
½ medium yellow capsicum, finely chopped
½ medium green capsicum, finely chopped
5-6 French beans, finely chopped
¼ cup corn kernels, boiled
Oil for deep-frying
¼ cup grated cottage cheese (paneer)
2 medium raw bananas, boiled, peeled and grated
2 teaspoons green chilli paste
1 teaspoon dried oregano
Crushed black peppercorns to taste
1 teaspoon red chilli flakes
½ teaspoon garam masala powder
Salt to taste
4 tablespoons refined flour (maida)
½ cup fresh breadcrumbs
Green chutney for spreading

Method

1. Heat sufficient oil in a kadai.
2. Mix together green peas, red capsicum, yellow capsicum, green capsicum, French beans, corn kernels, cottage cheese, raw bananas, green chilli paste, dried oregano, crushed peppercorns, chilli flakes, garam masala powder and salt in a bowl.
3. Add 2½ tablespoons flour and mix well using hands.
4. Divide the mixture into equal portions and shape into oval shapes.
5. Mix remaining flour in some water to make a smooth slurry. Take breadcrumbs on a plate.
6. Dip each portion in slurry and coat with breadcrumbs.
7. Deep-fry the portions in hot oil till golden brown and crisp. Drain on absorbent paper.
8. Spread some green chutney on a serving plate using a brush, place the veg bites and serve hot.
