Crunchy Rice Cracker with Sichuanese Sanxian Sauce (三鲜锅巴) | Chinese Cooking Demystified

Sanxian Guoba's one of our favorite things to order at a Sichuan restaurant. While it seems relatively unknown outside of China, it's a really cool dish.

This puffed rice cake's made by drying out and quickly deep frying rice at a scorching hot temperature so the rice can get nice and puffy. It's served with a thick sauce called 'sanxian', which makes a real satisfying sizzle.
