Makes 12 medium squares, serves 6 persons as main course
In Greece, we have such a great variety of our beloved cheese pies (aka Tyropita) and I have already posted a few.
Tbh this one is the easiest you can prepare. In Greek, it is called Patsavouropita (i.e. old rag pie), and it means a pie done quickly with creased or shredded phyllo sheets by a lazy cook or a cook with limited time!
When prepared, you just throw the phyllo sheets in the dish like an old rag, hence its funny name! Yet it is extremely delicious, crispy and crunchy!

Suitable for lacto-ovo vegetarians

INGREDIENTS:
450 gr. / 1 lb Phyllo Pastry (1 large package), thawed
400 gr. / 14 oz Greek Feta cheese, at room temp, crumbled
250 gr. / 9 oz Graviera cheese, grated (altern: Gouda cheese)
200-250 gr / 7-9 oz Kefalograviera cheese, grated (altern: Kefalotyri or Pecorino cheese)
2 medium Eggs @room temp.
1 cup / 250 ml fresh Milk, half skimmed
4/5 cup / 200 ml Single Cream, 20% fat
1/3 cup / 80 ml Olive Oil, to brush between the phyllo sheets
Freshly Ground Pepper
