Crispy Dried Fish Snack (小鱼干) | The Chinese Cuisine

These small fish are the perfect crunchy snack!

INGREDIENTS:
- 1 lb. smelt
- 30 ml whisked egg
- 15 g sugar
- 10 ml cooking wine
- 1 tbsp. oil
- 10g corn starch
- 1/2 tsp. salt
- paprika
- white pepper powder
- sichuan pepper powder
- garlic powder

DIRECTIONS:
1. add salt, paprika, white pepper powder, sichuan pepper powder, and garlic powder to fish. mix well
2. add in sugar, cooking wine, and mix well.
3. marinate for 30 minutes.
4. coat fish in corn starch and whisked egg
5. pan fry fish until golden brown
6. transfer to baking pan
7. bake at 300 ºF until crispy and dried (~30 minutes)
