Saganaki in Greek, means a small frying pan that we use for many dishes, cheese Saganaki being the best known and loved.
In this unusual recipe, I use Cretan Anthotyros Cheese which is hard and not easily edible as is. Commonly, its used grated on pasta or for au gratin dishes.
By frying it, it turns mellow, chewy and squishy inside while it remains hard and crispy outside. And it makes a fantastic, contrasting combo with fig jam!
A great appetizer or side dish with any other food your serve. Very easy to prepare, it can be served all year round.
Suitable for lacto-vegetarians.

INGREDIENTS:
150 gr / 5.5 oz Cretan Anthotyros hard, dry cheese, cut in a rectangle (1 cm / 0.4 in thick)
About 50 gr / 1.75 oz / 0.4 cup All-purpose Flour
Cold Water
Olive Oil or other for frying
2 tbsp. / 30 ml Fig Jam, homemade or store-bought
1 fresh Fig, cut in thin slices, to garnish
Optional: Lemon
