Chole With Aloo Tikki | Majha Kitchen | Sanjeev Kapoor Khazana

Crisp Aloo Tikkis and chole - a combination made in food heaven. This street food is a must try at home !

CHOLE WITH ALOO TIKKI

Ingredients

1 cup chickpeas (kabuli chana), soaked for 8-10 hours and boiled
1 tablespoon oil
1 teaspoon cumin seeds (jeera)
2 green chillies, finely chopped
2 medium onions, finely chopped
1 tablespoon ginger-garlic paste
2 medium tomatoes, finely chopped
Salt to taste
1 teaspoon coriander powder
1 teaspoon red chilli powder
2 teaspoons chole masala
1 teaspoon roasted cumin powder
1 tablespoon chopped fresh coriander leaves + for garnishing
½ cup chickpea stock
Aloo tikki
4 medium potatoes (aloo), boiled, peeled and mashed
Oil for deep-frying
¼ teaspoon turmeric powder
½ teaspoon red chilli powder
Salt to taste
2 tablespoons cornflour + for coating

Method

1. To prepare chole, heat oil in a deep non-stick pan. Add cumin seeds and sauté till fragrant. Add green chillies and sauté for 10 seconds.
2. Add ¾th of onions and sauté on medium heat till golden brown.
3. To prepare aloo tikki, heat sufficient oil in a kadai.
4. Mix together potatoes, turmeric powder, chilli powder, salt and 2 tablespoons cornflour in a bowl.
5. Divide the mixture into large equal portions and shape into tikkis.
6. Add ginger-garlic paste to the onion mixture and sauté for 1 minute.
7. Add ¾th of tomatoes and salt to onion mixture, mix and cook for 5-7 minutes. Add coriander powder, chilli powder, chole masala, cumin powder and 1 tablespoon coriander leaves, mix and cook for 1 minute.
8. Add chickpeas and mix. Add chickpea stock, mix, cover and cook for 5-7 minutes.
9. Spread some cornflour on a plate and coat each tikki with it.
10. Deep-fry the tikkis one by one in hot oil till golden brown and crisp. Drain on absorbent paper.
11. Lightly mash the chickpea mixture, add ¼ cup water, mix, cover and cook for 2-3 minutes.
12. Place tikkis on a serving plate. Put some chole and put remaining onions and remaining tomatoes on top.
13. Garnish with coriander leaves and serve immediately.
