Chettinadu milagai chutney/மிளகாய் சட்னி | Gayathiri's Cookbook

This very spicy and tasty milagai chutney is one of the Chettinad traditional recipe which is usually served with vellai Paniyaram,idly or dosa.
Ingredients:
Onion-3
Tomatoes- 8-10
Kashmiri chillies-25
Curry leaves- 10-15
Coriander leaves- 10-15 stems
Sesame oil- 6-8 tbsp
Mustard seeds- 1 tsp
Uraddal- 1 tsp
Hing- 1/2 tsp
Salt- As needed

Recipe:
1.Saute red chillies in oil for 5 minutes on low heat.Keep it aside.
2.Saute onion in 2 tsp oil until translucent.Then add tomatoes and sauté until it becomes soft.
3. Add curry leaves and coriander leaves. Saute for a minute.Then switch off the heat.Let it cool down.
4.Grind the red chillies first into a coarse paste.Then add sautéed onion & tomato, and then grind everything into a fine paste.
5. Heat 3-4 tbsp oil. Add mustard seeds,uraddal and hing. Add the ground paste when the uraddal turns golden brown.
6. Add salt. Let it boil for 5 more minutes, then add 2 tsp oil on top.
Milage chutney is ready. Serve it with idly, dosa or with vellai Paniyaram.
