Century Egg Congee (皮蛋瘦肉粥) | The Chinese Cuisine

INGREDIENTS (2 servings):
- 1/4 cup white rice
- 3 cups water
- 1 sliced century egg
- 1 oz. cooked chicken, diced (any lean meat will work)
- 1 tablespoon black beans
- salt
- sesame oil
- rousong (pork sung) & green onions as toppings

DIRECTIONS:
1. combine all the ingredients into a rice cooker or pot
2. for rice cooker, cook on 'porridge' setting for 80 minutes
3. for the stove, bring to a boil then reduce heat to a simmer and cover until it thickens (1 1/2 to 2 hours). stir in between
4. serve with desired toppings and enjoy!
