Carrot Rice/ கேரட் சாதம் | Gayathiri's Cookbook

This simple, healthy and delicious Carrot rice is a perfect lunch box recipe.You can make this with left over rice as well.

Ingredients:
Grated carrots- 2 cups
Oil/Ghee- 2 tbsp
Mustard seeds- 1/2 tsp
Uraddal- 1.5 tsp
Channadal- 1.5 tsp
Red chillies- 2
Curry leaves- For garnishing
Cooked rice- 2 cups
Turmeric powder- 1/2 tsp
Salt- 3/4 tsp
Shredded coconut- 1/4 cup

Directions:

1. Cook 1 cup basmati rice or regular raw rice. Mix 1 tsp of ghee with the cooked rice. Keep it aside.

2. Peel the skin and grate the carrots( 2 cups approximately)

3. Heat 2 tbsp oil in a pan. Add 1/2 tsp mustard seeds, 1.5 tsp uraddal, 1.5 tsp channadal , curry leaves and 2 red chillies. Saute until the dals turn golden brown.

4.Add and saute onion until translucent. Then add the grated carrots. Cook with 1/2 tsp turmeric powder, 3/4 tsp salt and a pinch of hing.

5. Saute for 5-7 minutes or until the vegetable is soft. Then add the cooked rice.Mix it well.

6. Sprinkle some dal powder(parupu podi) for aroma.(optional)

7.Roast 1/4 cup shredded coconut in ghee and then add.(optional).

Carrot rice is ready!!
