This simple, healthy and delicious Carrot rice is a perfect lunch box recipe.You can make this with left over rice as well.Ingredients:Grated carrots- 2 cupsOil/Ghee- 2 tbspMustard seeds- 1/2 tspUraddal- 1.5 tspChannadal- 1.5 tspRed chillies- 2Curry leaves- For garnishingCooked rice- 2 cupsTurmeric powder- 1/2 tspSalt- 3/4 tspShredded coconut- 1/4 cupDirections:1. Cook 1 cup basmati rice or regular raw rice. Mix 1 tsp of ghee with the cooked rice. Keep it aside.2. Peel the skin and grate the carrots( 2 cups approximately)3. Heat 2 tbsp oil in a pan. Add 1/2 tsp mustard seeds, 1.5 tsp uraddal, 1.5 tsp channadal , curry leaves and 2 red chillies. Saute until the dals turn golden brown.4.Add and saute onion until translucent. Then add the grated carrots. Cook with 1/2 tsp turmeric powder, 3/4 tsp salt and a pinch of hing.5. Saute for 5-7 minutes or until the vegetable is soft. Then add the cooked rice.Mix it well.6.
