Carrot Halwa/Gajar ka halwa | Gayathiri's Cookbook

This Warm, Rich and absolutely delicious Carrot halwa is a traditional Indian sweet or dessert made with fresh carrots ,milk and sugar.This can be made with condensed milk and khoya as well.

Ingredients:
Shredded carrots- 2 cups
Unsweetened khoya- 1/2 cup
Sugar- 1/2 cup
Cardamom powder- 1/4 tsp
Ghee- 2 tbsp
Cashews- 10

Directions:
1.Roast cashews in a tsp of ghee . Keep it aside.
2. Add 2 cups of shredded carrots and a pinch of salt.Saute until they turn tender and are cooked.
3. Add 1/2 cup khoya and stir well. Add 1/2 cup sugar. Continue cooking until the halwa thickens and leaves the edges of the pan.
4.Add ghee, cardamom powder and roasted cashews.
5. Switch off the heat when it starts to leave the edges of the pan.
Carrot halwa is ready!!
