Usually Stifado is made with meat braised in a thick tomato sauce with plenty of sweet onions or shallots. You will find many regional varieties of this beloved Greek dish made with: beef, rabbit, chicken or even octopus! During Lent, Stifado could instead be prepared using Borlotti beans. These beans are by nature sweet and nutty with a chestnut taste and texture. So they make a great combo with the sweet Onions, which play a key role in this recipe.
