Greek Stifado is one of the pillars of Greek Cuisine. The word Stifado (i.e. stew) comes from the ancient Greek word "tifos" meaning steam. Original Recipe was brought to Greece by Venetians, in the 13th century.
Usually Stifado is made with meat braised in a thick tomato sauce with plenty of sweet onions or shallots. You will find many regional varieties of this beloved Greek dish made with: beef, rabbit, chicken or even octopus!
During Lent, Stifado could instead be prepared using Borlotti beans. These beans are by nature sweet and nutty with a chestnut taste and texture. So they make a great combo with the sweet Onions, which play a key role in this recipe.
Let me show you how to make this umami, low cost and healthy dish.
Suitable for fasting and vegans.

INGREDIENTS:
300 gr / 10.5 oz Dried Borlotti (cranberry) Beans
3 medium-large Onions, sweet variety, cut in 4ths
2 Garlic Cloves
30 ml / 2 tbsp. white Vinegar
1 tsp. All-Spice (bahari)
100 ml / 0.4 cup Olive Oil
400 gr / 14 oz chopped Tomatoes, canned (concass)
About 1 lt. / 4 cups Water
1 tbsp. Sugar
bunch fresh Parsley, finely chopped
Ground Salt and Pepper and optionally a pinch chili flakes
