Black eyed peas are very healthy and adds protein and fibers to the dish.This is a very simple and quick dish which can be served with both roti and rice.Ingredients:Black eyed peas- 1 cupOil- 4 tbspBay leaf- 1Cinnamon stick- 1Fennel seeds- 1 tspOnion-1Green chillies- 2Ginger garlic paste- 1 tspTomatoes- 2Turmeric powder- 1/2 tspSalt- 1 tspSugar- 1 tspCumin powder- 1 tspCoriander powder- 1 tspGaram masala powder- 1 tspRed chilli powder- 1 tspCoriander leaves- For garnishingDirections:1. Soak 1 cup black eyed peas(Vella karamani) overnight.Pressure cook the soaked peas for upto 4 whistles. Keep it aside.2. Heat 2 tbsp oil. Add 1 bay leaf, 1 cinnamon stick and 1 tsp fennel seeds. Saute for a minute.3. Add and saute onion (1 big) until translucent.Then add 2 green chillies, 1 tsp ginger garlic paste and saute for a minute.4. Add 2 tomatoes and cook until soft. Add 1 tsp turmeric powder, 3/4 tsp salt and 1 tsp sugar and cook for a minute.5. Then add 1 tsp jeera powder, 1 tsp coriander powder, 1 tsp garam masala powder and 1/2 tsp red chilli powder. Add 1/2 cup water and cook until oil separates or until the raw smell of the masala powders go away.6. Grind 1/4 cup cooked black eyed peas into a paste.Add the ground paste and cook for 2 minutes.7. Add the cooked balck eyed peas and cook for another 3-5 minutes.
