Makes 3 sandwiches
B-I-S-K-O-T-O-L-O-U-K-O-U-M-A! A long word for the easiest sweet ever invented. Made with just 2 ingredients, no baking, and can also be prepared by kids!
I was reminded about this sweet by my husband, while he was reminiscing that this was his Dad Yianniss favorite treat when he was a child.
Long story short: Post-World War II Greece had scarce products, but my Father-in-laws parents were running a grocery store-luckily for him! As a child, he often helped himself, by picking 2 biscuits and one loukoumi from the large boxes on the shops display bench. He squeezed the loukoumi between the biscuits to make a sandwich and gobbled it up in two bites, before he was caught by his mom! This was a typical treat in those hard times.
Lately, this simple sweet has had a strong come-back, being a wonderful (and also low-cost) treat in Christenings (baptisms), to offer out to guests.
Lets see together how to prepare it. Its very simple but holds a small trick in order to succeed.
Suitable for lacto-vegetarians.

INGREDIENTS:
6 Petit-Beurre Biscuits
3 Loukoumi pcs (lokum or Turkish delight-any taste, rose, mastiha, fruit)
To decorate for christening:
3 Ribbons
3 Paper Doilies
