So if you are looking for a sweet potato pie recipe - give this one a try.Ingredients:2-3 large orange-fleshed sweet potatoes, (you need 3 cups cooked and pureed)125 mL (½ cup) butter, melted60 mL (¼ cup) packed light brown sugar60 mL (¼ cup) Maple Syrup3 large eggs60 mL (¼ cup) 35% whipping cream2 mL (½ tsp) ground cinnamon5 mL (1 tsp) freshly grated nutmeg30 mL (2 Tbsp) bourbon 2 mL (½ tsp) coarse saltMethod:Preheat oven to 240ºC (475ºF).Prick the sweet potatoes with a fork and bake until the sweet potatoes are tender when pierced with a knife, about an hour.Peel the sweet potatoes and discard the skins. Use a hand-held electric mixer to blend until creamy and smooth. You'll need 3 cups for the filling; scoop out the remainder and reserve for another use.Lower the oven to 180ºC (350ºF).To the sweet potato puree, add the melted butter, brown sugar, maple syrup, eggs, cream, cinnamon, nutmeg, bourbon, and salt.
