Serves 3-4 persons
Come closer and let me show you how to make a vegetarian variation to the classic, authentic delicacy of Prawns Saganaki!
This time in this unique recipe, I use okra instead of prawns, baking them slowly in the oven, in a rich, homemade tomato sauce, plenty of feta cheese and Ouzo.
A super easy recipe to create a New family favourite.
Suitable for lacto-vegetarians.

INGREDIENTS:
500 gr / 1 lb 2 oz Okra, fresh or frozen
200 gr / 7 oz Greek Feta Cheese
350 gr / 12 oz homemade (or can) Thick tomato sauce (passata)
200 gr / 7 oz Diced tomatoes, canned
1 tsp. Sugar
1-2 shots Ouzo
Optional: 5-6 drops Tabasco (if you want it a bit spicy)
3 tbsp. / 45 ml Olive oil
750 ml / 3 cups white Vinegar (for removing okras slime)
Ground black Pepper -NO SALT-feta is salty enough!!
To garnish: 2 tbsp. fresh Parsley or Mint, finely chopped
