Serves 3-4 persons
Okras have people who love them and others who hate them. If you belong in the 2nd category, then try this simple dish.
Okras are baked slowly together with potatoes and a light tomato sauce, in a clay pot for that divine earthy flavor.
Okras are really an amazing, versatile vegetable, so try this recipe with my trick to remove okras' slime and I can assure you, you will change your mind.

Suitable for vegans and fasting.

INGREDIENTS:
500 gr / 1 lb 2 oz Okras (fresh or frozen and thawed)
500 gr / 1 lb 2 oz Potatoes (weighed clean)
1.5 medium or 1 large, sweet Onion
1 large Garlic clove
cup / 125 ml Olive Oil
1 tsp. Sugar
tsp. ground Cinnamon
cup / 125 ml Thick Tomato Sauce (passata-canned or fresh)
45-50 ml / 3-3.2 tbsp. red wine Vinegar
250 ml / 1 cup Water
750 ml / 3 cups white Vinegar (for removing okras slime)
Freshly Ground Salt and Pepper
