Serves 3-4 persons as main course or 5-6 as Meze/side dish
Fava has a smooth, mushy texture when boiled and can make a wonderful bed (base) for baked Octopus and caramelized onions.
The octopus is baked slowly in the oven, in a clay pot, so that it doesnt dry out. Instead it turns fork tender and juicy. And the caramelized onions are so appetizing.
Make this dish with the amazing variety of fava beans produced in the Greek island of Schinoussa where they prepare and serve this combo made in heaven.
I can promise you one thing: that you will definitely get hooked and eat it all the time!
Suitable for fasting.

INGREDIENTS:
Ingredients for the Octopus:
1 Whole Octopus, 750 gr / 1 lb 10 oz (fresh or frozen)
2.5 tbsp. / 40 ml Olive oil
3.5 tbsp. / 50 ml Vinegar
1 Garlic clove
2 Bay Leaves
1 tsp. dry or fresh Oregano
Ground Pepper only

Ingredients for the Fava and caramelized Onions:
250 gr. / 9 oz Fava beans (Yellow Split peas)
4 cups / 1 lt. Water (to boil fava)
1 small Onion (for the fava)
1 medium, sweet Onion (to caramelize)
3-4 tbsp. / 45-60 ml Extra Virgin Olive Oil
2 tbsp. / 30 ml Balsamic Vinegar or Glaze (syrup)
1 tbsp. Capers
Ground Salt and Pepper
