Baby Back Ribs in the Instant Pot

Make delectable baby back ribs that rival what you'd get at your favorite smokehouse. Cut pork loin rack of ribs into four pieces, each with three or four ribs. Rub the pieces well with a BBQ rub (use a favorite commercial rub, or mix 2 tablespoons chili powder, 2 tablespoons paprika, a teaspoon of ground cumin and some brown sugar to make your own). Brush ribs also with your favorite bottled BBQ sauce and place into the Instant Pot liner pan, with the ribs leaning against each other, not laying flat in the pot. Add 1 cup water and a few drops of Liquid Smoke to the pot. Put the lid on, with valve set to SEALING, and set pot to MANUAL (or PRESSURE COOK, HIGH) for 30 minutes. While ribs are cooking, line a heavy baking sheet with foil, and cover with a wire rack. Heat oven to 350 degrees. When pressure is done, use a quick release. Remove the ribs with tongs and place them on the rack on your baking sheet. Brush generously with more BBQ sauce. Change oven setting to BROIL and put the ribs into the oven about 5 inches from the broiler. Set oven timer to four minutes, and when BBQ sauce is glossy and bubbly, remove the ribs, turn them over, brush again with BBQ sauce and put back under the broiler for 3 or 4 more more minutes, checking often to make sure they're looking good. Remove from the oven and ENJOY. Serve with more BBQ sauce and plenty of paper towels!
