Akki Roti | Sanjeev Kapoor Khazana

Delicious Rotis made with rice flour, onion coconut and carrots.

AKKI ROTI (RICE FLOUR ROTI)

Ingredients

1½ cups rice flour
1 medium onion, finely chopped
½ cup fresh scraped coconut
3-4 green chillies, finely chopped
1 medium carrot, grated
1 tsp red chilli powder
¼ tsp turmeric powder
Salt to taste
A pinch of asafoetida
2 tbsps ghee + greasing + for shallow-frying
1 tsp cumin seeds
Salt to taste
2 tbsps fresh coriander leaves

Method

1. Boil 2 cups water in a non-stick pan. Meanwhile, in a bowl, add rice flour, onion, coconut and green chillies and grated carrot, red chilli powder, turmeric powder, salt, asafoetida, 1 tbsp ghee and cumin seeds.
2. Add salt and remaining ghee in the boiling water and mix well. Add required amount of boiling water in the rice flour mixture and mix well. Knead into soft dough, add chopped coriander and mix well.
3. Heat a non-stick tawa. Cover worktop with a plastic wrap and grease it with ghee, place a portion of the dough over it, place another plastic wrap over it and spread lightly with the finger tips to make a roti.
4. Place the prepared roti on hot tawa, drizzle ghee and cook till golden brown on both sides. Serve hot.
