Achari Pineapple Tikka | Simple Vegetarian Khana With Chef Saurabh | Sanjeev Kapoor Khazana

Achari Paneer tikka is a delicious starter made with paneer (Indian Cottage Cheese) marinated in an achari (Pickle spices) marinade. The soft and juicy morsels is quick and easy appetizer.

ACHARI PINEAPPLE TIKKA

Ingredients

1 medium pineapple, peeled, cored and cut into 1 inch pieces
3 tablespoons mango pickle masala (achar) + for brushing
1 teaspoon coriander seeds
½ teaspoon onion seeds (kalonji)
¼ teaspoon fenugreek seeds
¼ cup hung yogurt
½ teaspoon garam masala powder
¼ teaspoon turmeric powder
½ teaspoon yellow mustard powder
1 teaspoon red chilli powder
1 teaspoon ginger-garlic paste
Salt to taste
Oil for greasing
Green capsicum curls for garnishing

Method

1. Dry-roast coriander seeds, onion seeds and fenugreek seeds in a non-stick pan till fragrant. Transfer in a mortar and coarsely crush using a pestle.
2. To prepare marinade, mix together hung yogurt, ground roasted coriander mixture, garam masala powder, turmeric powder, yellow mustard powder, chilli powder and pickle masala and ginger-garlic paste in a bowl. Add salt and mix well.
3. Add pineapple pieces to the marinade and mix well. Set aside to marinate for 10-15 minutes.
4. Preheat oven to 180° C.
5. Grease a baking tray with some oil and place the marinated pineapple pieces. Put the tray into the preheated oven and bake for 4-5 minutes.
6. Brush some mango pickle masala in the center of a serving platter, place the pineapple tikkas and serve hot garnished with green capsicum curls.
