Meatball
Ingredients
100g ground chicken
1/2 pack enoki mushrooms
1 shiitake mushroom
5cm long green onion
1/2 egg (beaten)
2 tsp sake
1 tsp sesame oil
1Tbsp potato starch
2 tsp miso
1 Tbsp vegetable oil
1 tsp sake
2 tsp soy sauce
2 tsp mirin
1 tsp ginger

Directions
1. Mince the enoki mushrooms, shiitake mushrooms, and long green onion.
2. Put the ground chicken in a bowl, add the beaten egg, sake, sesame oil, potato starch, and miso.
3. Mix the ingredients well, and shape into bite-size balls.
4. Heat the vegetable oil in a frying pan, and cook the meatballs.
5. Once the outside of the meatballs have been cooked, add the sake, soy sauce, mirin, and ginger, and roll the meatballs to cover them with sauce.

Dashi-maki Japanese-style Omelet
Ingredients
3 eggs
1 Tbsp sake
1 pack (5g) Okabeya instant dashi
1 Tbsp mirin

Directions
1. Break the eggs into a bowl, and mix thoroughly with the instant dashi, mirin, and sake.
You can easily blend the eggs if you use Suncrafts Magellan egg-mixing tool.
2. Use some paper towel to cover a rectangular tamago-yaki pan with a thin coating of vegetable oil (not listed in the ingredients) and pour in about 1/4 of the egg mix, spread the egg out all over the pan, cook until half done, roll the egg forward towards you, re-oil (not listed) the far half of the pan, and push the egg to the far end of the pan.
3. Add more vegetable oil (not listed) to the front of the pan, pour in egg mix, lift up the cooked egg, and allow the new egg to run under it, then roll the cooked egg forward to the front of the pan.
4. Repeat the previous process until all of the egg is cooked, then roll it in a bamboo rolling mat, and wrap rubber bands around the mat to keep the mat in place.
5. After the egg has slightly cooled, cut it into pieces 1.5-cm wide.
