Yaki-Imo (Roasted Japanese Sweet Potato) | Graces Japanese Cooking

Roasted satsuma-imo (Japanese Sweet potato) is often called “yaki-imo”. Yaki meaning baked, grilled, or roasted. Satsuma is a region in Japan known for its sweet potatoes.

Yaki-imo is often enjoyed as a snack or used in pastries as an alternative to sugar. It’s so sweet and tasty that a simply roast is all that is needed to enjoy this winter vegetable:)

The sweet potato I used in the video is huge, approx one pound. There are smaller ones to choose from, which I highly recommend, requiring less cooking time. There are even baby sweet potatoes that we’ve found that are just as sweet and delish.

I normally roast a few and pop it in the frig or freezer to enjoy throughout the week.


Recipe:

1 lb Japanese sweet potato

1. Wash and pat dry.
2. If using an oven, preheat to 400F. If using a toaster oven, bake at 400F. If the skin starts to burn or blacken at any point you may want to lower the temperature and adjust accordingly. We don’t want burnt skin.
3. Place potato(s) directly on the rack and bake for 1 hour. Turn potato a few times.
4. Check the doneness of the potato as you go by inserting a toothpick in the thickest part of the potato. The toothpick should go right through without any resistance when it is completely cooked.
5. Remove from the oven and cool 2-3 minutes on a rack. Just until you’re able to handle the potato but still steamy inside.
6. Cut in half, remove outer skin, and enjoy!!
