After years of visiting Hong Kong - this XO Shrimp Chow Mein XO酱炒面 recipe is one of our favourites. A really easy shrimp stir fry, with stir fried noodles and XO sauce!
Ingredients:
500g (1 pound) peeled shrimp
Salt and pepper to taste
30 mL (2 Tbsp) sesame oil
Oil for frying (high smoke point like Grapeseed)
2-3 garlic cloves, minced
Handful of snap peas / snow peas
1 large carrot, cut into batonettes
2 big handfuls bean sprouts
4-5 green onions, roughly chopped
Your choice of lo main / chow mien noodles.
15-30 mL (1-2 Tbsp) soy sauce
15 mL (1 Tbsp) oyster sauce
15-30 mL (1-2 Tbsp) XO sauce


Method:
Season the shrimp with salt, black pepper, and sesame oil.
Mix to coat the shrimp.
Have a pot of boiling water standing by to cook the noodles.
Heat wok on high heat, and splash in some grapeseed oil.
Toss in the shrimp, and stir them around just until they turn pink.
Remove the shrimp from the wok, put the wok back on the heat and add more oil if needed.
If using dry noodles drop them in the boiling water now.
Toss into the wok the peas and carrots, stir fry until tender crisp.
Throw in the garlic, bean sprouts, and onions.
If using fresh noodles drop them in the boiling water now.
Toss and continue cooking the veg in the wok.
Add the shrimp back to the wok.
Pull the noodles from the water (when al dente), and drop them directly into the wok.
Stir and toss in the soy, oyster, and XO sauce.
