Wine Braised Carrots And Shallots Recipe | Glen And Friends Cooking

This Wine Braised Carrots And Shallots side dish Recipe is sure to be a hit on your holiday table.
Ingredients:
30 mL (2 Tbsp) ghee, clarified butter, or oil
500 g (1 pound) carrots, peeled and chopped
5-6 shallots or chipolini, peeled
125 mL (½ cup) dry white wine
1-2 sprigs thyme
Pinch of salt and pepper


Method:
Preheat oven to 160ºC (325ºF).
In a heavy pan with a lid, melt the ghee over high heat.
Add the carrots and shallots to the pan and stir around until they get a nice caramel exterior.
Pour in the wine, bring to a simmer and stir.
Season with salt and pepper, and the thyme.
Put on the lid and place in the oven for 20 minutes or until tender.
