Yakitori means grilled chicken or grilled bird. Its a delicious meal consisting of bamboo skewered pieces of chicken which are cooked over charcoal fire. This recipe uses a griddle so you can make it at home, but it will apply equally to your BBQ. If all you have is a frying pan, thats fine too, it will still work. You first make a sauce by concentrating the ingredients, this acts more like a glaze thats later brushed on, for that intense umami taste.
