Nankhatai or butter biscuits whatever the name we use, are totally delicious Indian cookies with some crusty walnuts.WALNUT NANKHATAIIngredients 1½ cups refined flour (maida)½ cup coarsely crushed California Walnuts California Walnut halves as required¾ cup powdered sugar½ cup gram flour (besan)1 tsp baking powder¼ tsp baking soda¼ tsp green cardamom powder1 cup gheeMethodPreheat oven to 180° C. Line a baking tray with a silicon mat. Mix together refined flour, powdered sugar, gram flour, baking powder, baking soda, cardamom powder and crushed California Walnuts in a bowl. Add ghee and mix till well combined. Divide the mixture into equal portions, shape into balls and lightly flatten between your palms. Place the portions on the lined baking tray, place one California Walnut half in the center of each portion and lightly press. Put the tray into the preheated oven and bake for 20-25 minutes. Remove from oven and cool to room temperature.Serve or store in an air tight container.
