Shahi Malai Kofta recipe is very delicious, and it melts in the mouth like anything. Shahi Malai kofta is a rich creamy dish. Malai kofta is popular vegetarian main course recipe of all menus. Malai means cream and kofta are fried dumpling balls that are crunchy outside and soft and creamy inside. Koftas are made up of potatoes, vegetables like ghiya or paneer. There are many different ways of making kofta. Our Shahi Malai kofta is a vrat version, and that is why we have used only limited spices. We have made the gravy of malai kofta with curd, milk, cashew nuts, magaz and almonds.Ingredients used for Vrat ke Malai Kofta :bottle gourd (giya) - 1 cup (grated)potato - 1 cup (grated)tomato - 2 medium size (pureed)curd - 1 tbspsinghare ka atta - 2 tbspmilk - 4 tbspginger paste - 1 tspgreen chilli - 1 finely choppedcashew nuts - 4almonds - 4peanuts - 8-10magaz - 1 tbspsalt - 2 tspblack pepper powder - 1/2 tspred chilli powder - 1/2 tspfresh coriander leaves finely choppedoil - for fryingMethod to prepare how to cook Vrat Malai Kofta:step 1* take a bowl, squeeze extra water and add grated vegetables(potato and giya) in it.* mix well , add green chilli, 1 tsp salt, some fresh coriander leaves, 1/2 tsp ginger paste, singhare ka atta and curd.* mix well without any water.* make kofta's for frying.* now keep oil for frying and fry them on low flame till golden brown.step 2 * for gravy.* take a grinder add dry fruits, magaz, peanuts, milk, 1/2 tsp ginger paste, 2-3 coriander leaves and 1/2 tsp salt.* make a smooth paste and keep aside.* now take a pan add 1tbsp oil and tomato puree saute well for 2 mins.* add 1/2 tsp salt, black pepper powder, red chilli powder and some green coriander leaves.* cover and cook for 5 min on medium flame.* mix well and now add the paste which we have grinded.* mix well and saute for 2 mins.* add 1 cup water and fried kofta's.* cover the lid and cook for 5 mins.* close the flame and your yummy vrat ke kofte is ready to serve hot.
